Method
1. Pre-heat oven - 175°C / 350°F
2. Mix in all purpose flour, baking powder, baking soda, ground cardamom, ground cinnamon, ground ginger, nutmeg, salt and ground cloves in a clean medium bowl
3. Add brown sugar and butter to a clean large mixing bowl
4. Mix until combined - approx 1 min
5. Add pumpkin purée, egg and vanilla extract to the large mixing bowl
6. Mix until smooth
7. Combine dry ingredients into the wet mix until the dough is free of lumps
8. Prepare a clean baking sheet
9. Scoop about 1.5 - 2 tablespoons for each cookie
10. Bake - 12 min, 175°C / 350°F
11. Transfer onto cooling rack
