This recipe is wonderful as a layer in a cake or piped into a small jar with a bit of chocolate ganache on top. Perfectly salty, sweet and decadent!

Step preview

  1. Fill a medium bowl with ice water
  2. Add silver leaf gelatin sheet then set aside
  3. Get a clean stand mixer bowl
  4. Add powdered sugar
  5. Add heavy cream
  6. Beat for 3min 30s on medium speed until soft peaks form then set aside
  7. Get a clean glass measuring cup
  8. Add heavy cream
  9. Add salt
  10. Heat in microwave until boiling and turn off heat
  11. Transfer gelatin to glass measuring cup
  12. Stir until dissolved
  13. Add peanut butter
  14. Stir until well combined
  15. Fold one quarter of cream into glass measuring cup
  16. Combine carefully until creamy
  17. Chill in fridge for approx 6h until set
