Smokey aubergine fritters, perfect as a starter or a light summer lunch

  • Ground cinnamon icon

    ¼ teaspoon (about 0.66 g)

  • Tahini icon

    1 tablespoon (about 16.5 g)

  • Ground almonds icon

    90 g (about ½ cup)

  • Cilantro icon

    10 g (about ¼ cup)chopped

  • Extra virgin olive oil icon

    METHOD


  • 1. Add eggplant and garlic clove to a clean medium bowl
  • 2. Mash with potato masher
  • 3. Add ground cumin, paprika, ground cinnamon, tahini, ground almonds and cilantro to the medium bowl
  • 4. Mix until just combined
  • 5. Form
  • 6. Add extra virgin olive oil to a clean frying pan
  • 7. Fry in frying pan until golden brown - medium heat
  • 8. Serve
