Method
1. Pre-heat oven - 175°C
2. Add coconut oil, unsalted butter and brown sugar to a clean stand mixer bowl
3. Cream together
4. Add egg and almond butter to the batter
5. Mix until smooth
6. Add vanilla extract, all purpose flour, whole wheat flour, baking powder, ground cinnamon and salt to the batter
7. Mix until dough forms
8. Grease a clean baking dish
9. Press batter into baking dish
10. Bake for 20-24 minutes, or until just set, 175°C
11. Once almond butter bars are cooled, make your cheesecake frosting layer: add cream cheese, greek yogurt, vanilla extract, unsalted butter and dark brown sugar to a clean stand mixer bowl
12. Whisk together all cheesecake frosting ingredients
13. Spread over almond butter bars
14. Sprinkle with blueberries and strawberries
