    Method

  • 1. Pre-heat oven - 175°C
  • 2. Add coconut oil, unsalted butter and brown sugar to a clean stand mixer bowl
  • 3. Cream together
  • 4. Add egg and almond butter to the batter
  • 5. Mix until smooth
  • 6. Add vanilla extract, all purpose flour, whole wheat flour, baking powder, ground cinnamon and salt to the batter
  • 7. Mix until dough forms
  • 8. Grease a clean baking dish
  • 9. Press batter into baking dish
  • 10. Bake for 20-24 minutes, or until just set, 175°C
  • 11. Once almond butter bars are cooled, make your cheesecake frosting layer: add cream cheese, greek yogurt, vanilla extract, unsalted butter and dark brown sugar to a clean stand mixer bowl
  • 12. Whisk together all cheesecake frosting ingredients
  • 13. Spread over almond butter bars
  • 14. Sprinkle with blueberries and strawberries
