You can never go wrong with coffee, chocolate and walnuts...brownies to die for, with no gluten, no dairy and no refined sugar, but heaps 'o' taste.

    75 g (about 3 ½ tablespoons)

    45 g (about ½ cup)

    200 g (about ¾ cup)

    90 g (about ¾ cup)toasted, shelled

    METHOD


  • 1. Pre-heat oven - 160°C
  • 2. Line the base of a loaf tin (23 x 14cm) with paper that comes up over the sides for easy removal
  • 3. Add egg, vanilla, salt, baking soda, maple syrup and cocoa powder to thermomix bowl
  • 4. Blend - approx 20 sec, speed 5
  • 5. Add walnuts
  • 6. Mix - approx 7 sec, dough
  • 7. Spread into the loaf tin
  • 8. Bake until soft - 20 min, 160°C
  • 9. Cool and serve...or eat warm
