  • Pastry flour icon
    Pastry flour120 g
  • Coconut sugar icon
    Coconut sugar100 g
  • Rolled oats icon
    Rolled oats80 g
  • Ground ginger icon
    Ground ginger½ tablespoon
  • Baking soda icon
    Baking soda1 teaspoon
  • Water icon
    Water2 tablespoonscold
  • Coconut oil icon
    Coconut oil2 tablespoons
  • Golden syrup icon
    Golden syrup2 tablespoons
    Method

  • 1. Pre-heat oven - 190°C / 375°F
  • 2. Heat coconut oil and golden syrup in a clean saucepan until melted while stirring occasionally - medium heat
  • 3. Set aside and continue
  • 4. Add pastry flour, coconut sugar, rolled oats, ground ginger and baking soda to a clean large mixing bowl
  • 5. Mix briefly until combined
  • 6. Mix in oil and syrup mixture
  • 7. Add and mix until dough forms
  • 8. Line a clean baking sheet with parchment paper
  • 9. Use a small spoon or melon baller to divide the dough into very small balls
  • 10. Transfer mixture to baking sheet
  • 11. Bake - approx 15 min, 190°C / 375°F
  • 12. Transfer onto cooling rack and let cool
