This Pate a Choux recipe is one of the classics that everyone should know how to make, and you can use over and over for both sweet and savory decadent treats. The baked choux provides an excellent shell to ice cream for profiteroles, or outer crust for a crab salad puff. This recipe also includes an Early Grey pastry cream filling. I add Earl Grey tea bags to the scalded milk in the otherwise, traditional pastry cream recipe. It adds a unique flavor and makes a lovely addition to afternoon tea. The eclairs are filled with the pastry cream, then topped with a simple chocolate ganache you can make in the microwave.

  1. Pre-heat
  2. Get a clean saucepan
  3. Add salt
  4. Add butter
  5. Add milk
  6. Heat until just boiling and turn off heat
  7. Add bread flour
  8. Whisk until combined
  9. Return
  10. Stir until dough forms
  11. Transfer dough to large mixing bowl
  12. Mix until cool
  13. Add beaten egg bit by bit
  14. Whisk until completely mixed
  15. Line a baking sheet with parchment paper
  16. Pipe pastry into strips with piping bag
  17. Bake pastry for approx 10min until light and fluffy
  18. Reduce until golden brown
  19. Let cool and continue
  20. Get a clean large saucepan
  21. Add sugar
  22. Add milk
  23. Heat gently and bring to a boil
  24. Add earl grey teabag
  25. Simmer for 4min then set aside
  26. Get a clean medium bowl
  27. Add cornstarch
  28. Add sugar
  29. Whisk together
  30. Add egg yolk
  31. Add egg
  32. Whisk until smooth
  33. Pour half of liquid into mixture and mix
  34. Return mixture to liquid and continue mixing
  35. Whisk until just boiling and turn off heat
  36. Mix in butter thoroughly
  37. Cover with plastic wrap and let cool
  38. Get a clean small bowl
  39. Add heavy cream
  40. Heat in microwave
  41. Add dark chocolate
  42. Whisk until well blended and let cool
  43. Assemble
