I love going peach picking and always pick too many peaches. One of my favorite things to make is a peach pie spiked with bourbon and nutmeg. It's delicious with vanilla or butter pecan ice cream.

  • Peach icon

    Method

  • 1. Pre-heat oven - 175°C / 350°F
  • 2. Add peach, white sugar, cornstarch, nutmeg, lemon, brown sugar, whiskey and white flour to a clean medium bowl
  • 3. Toss together
  • 4. Transfer fruit to saucepan
  • 5. Cook and turn off heat - approx 5 min, medium heat
  • 6. Roll out basic pie crust onto a clean lightly floured surface and fit it in the pie dish
  • 7. Transfer fruit to pie dish
  • 8. Assemble pie crust stripes on top of the fruits
  • 9. Bake until golden brown - 40 min, 175°C / 350°F
  • 10. Let cool completely
  • 11. Serve
