It is one of the most incredible dishes to come out of France. There are three components to a cassoulet: the bean mixture, the stew and the trimmings that get all assembled together into one glorious dish.

Step preview

  1. Get a clean large saucepan
  2. Add canned canned navy beans
  3. Add pork shoulder
  4. Place peeled onion on a cutting board
  5. Add bay leaves
  6. Add cloves
  7. Assemble
  8. Transfer onions to beans
  9. Add water
  10. Heat until boiling and cover
  11. Simmer for approx 1h
  12. Get a clean stockpot
  13. Add olive oil
  14. Add diced bacon
  15. Cook for approx 5min on high heat
  16. Add peeled chorizo
  17. Cook for approx 5min
  18. Transfer liquid to plate then set aside
  19. Retrieve stockpot
  20. Add finely sliced onion
  21. Add celery stalk
  22. Add diced cherry tomatoes
  23. Add minced fresh garlic
  24. Cook for approx 1min until tender
  25. Add cubed steak to a medium bowl
  26. Add salt
  27. Cook for approx 4min
  28. Add red wine
  29. Cook for 4min
  30. Add worcestershire sauce
  31. Add beef stock
  32. Add bay leaves
  33. Heat until boiling
  34. Simmer for 30min on medium heat
  35. Pre-heat
  36. Get a clean large mixing bowl
  37. Add breadcrumbs
  38. Add olive oil
  39. Stir until completely mixed
  40. Drain beans
  41. Transfer beans to Dutch oven
  42. Transfer meat to Dutch oven
  43. Transfer liquid to Dutch oven
  44. Sprinkle mixture with Dutch oven
  45. Cook for 1h 30min on high heat
  46. Sprinkle with fresh thyme
  47. Serve
