A picture is worth 1000 words, or in this case, 1000 batches of lemon tarts. I’ve got a lemon tree (and a tangelo tree) that keeps on giving. I set to work to create a soft, creamy, slightly gooey, sweet, tart lemon bar. I lost track of how many batches I made, but THESE, my friend, are perfect. They’re more like lemon tarts than bars, based on their circular nature, but they received rousing endorsements and I hope you enjoy them as much as everyone within a one mile radius of our house has.

Step preview

  1. Pre-heat
  2. Get a clean stand mixer bowl
  3. Add softened salted butter
  4. Add sugar
  5. Add white flour
  6. Mix until dough forms
  7. Transfer dough to muffin pan
  8. Flatten with teaspoon until 1 cm thick
  9. Bake for approx 10min until browned at edges
  10. Get a clean small bowl
  11. Add sugar
  12. Add white flour
  13. Add melted salted butter
  14. Add room temperature egg
  15. Whisk vigorously then set aside
  16. Transfer pie crust onto cooling rack for approx 5min
  17. Get a clean medium bowl
  18. Add zest of orange
  19. Add zest of lemon
  20. Add juice of orange
  21. Add juice of lemon
  22. Transfer eggs to mixture
  23. Mix until smooth
  24. Pour mixture into muffin pan one by one
  25. Bake for 12min
  26. Let cool in freezer for approx 20min until set
  27. Garnish with powdered sugar
