Chicken Piccata has always been a huge favorite in my family. I remember my mother and big sister both making it so often when I was growing up and I lived for it. It’s such a fresh, bright and easy dish. I made my version of the family recipe this week and it was everything I hoped for! I used a large skillet with deep sides to panfry the chicken and create the sauce.

Step preview

  1. Add chicken breast to a cutting board
  2. Prepare
  3. Get a clean medium bowl
  4. Add white flour
  5. Add garlic powder
  6. Add salt
  7. Add black pepper
  8. Whisk until combined then set aside
  9. Get a clean frying pan
  10. Add olive oil
  11. Add salted butter
  12. Heat slowly on medium heat until bubbles form
  13. Coat chicken with dry ingredients
  14. Panfry for 4min on medium heat
  15. Flip
  16. Panfry for 4min
  17. Transfer chicken to plate then set aside
  18. Retrieve frying pan
  19. Add chicken stock
  20. Add zest of lemon
  21. Add juice of lemon
  22. Add rinsed capers
  23. Heat until just boiling while stirring occasionally
  24. Return chicken to frying pan to simmer
  25. Fill a large saucepan with water
  26. Heat until boiling
  27. Add spaghetti
  28. Cook for approx 10min until tender
  29. Strain
  30. Assemble
  31. Garnish with coarsely chopped fresh parsley
