Chicken Piccata has always been a huge favorite in my family. I remember my mother and big sister both making it so often when I was growing up and I lived for it. It’s such a fresh, bright and easy dish. I made my version of the family recipe this week and it was everything I hoped for! I used a large skillet with deep sides to panfry the chicken and create the sauce.

  1. Get a clean cutting board
  2. Add chicken breast
  3. Prepare
  4. Get a clean medium bowl
  5. Add white flour
  6. Add garlic powder
  7. Add salt
  8. Add black pepper
  9. Whisk until combined then set aside
  10. Get a clean frying pan
  11. Add olive oil
  12. Add salted butter
  13. Heat slowly until bubbles form - medium heat
  14. Coat chicken with dry ingredients
  15. Panfry - 4 min, medium heat
  16. Flip
  17. Panfry - 4 min
  18. Transfer cutting board to plate then set aside
  19. Get frying pan
  20. Add chicken stock
  21. Add zest of lemon
  22. Add juice of lemon
  23. Add rinsed capers
  24. Heat until just boiling while stirring occasionally
  25. Return chicken to frying pan to simmer
  26. Fill a clean large saucepan with water
  27. Heat until boiling
  28. Add spaghetti
  29. Cook until tender - approx 10 min
  30. Strain
  31. Assemble
  32. Garnish with coarsely chopped fresh parsley
