    Method

  • 1. Add pasta, water and salt to a clean large saucepan
  • 2. Heat until boiling - high heat
  • 3. Continue to cook - approx 7 min
  • 4. Add avocado, arugula, olive oil, pine nuts, parmesan cheese, almond milk and sea salt to a clean blender jug
  • 5. Blend until creamy then set aside
  • 6. Add olive oil to a clean frying pan
  • 7. Heat over high heat
  • 8. Add shrimp
  • 9. Cook for 3 min
  • 10. Add lime, lime, sea salt, chili powder, smoked paprika and red pepper flakes
  • 11. Cook - approx 1 min, low heat
  • 12. Add cherry tomatoes
  • 13. Spoon purée into shrimp while stirring occasionally
  • 14. Drain pasta
  • 15. Transfer pasta to shrimp
  • 16. Toss gently until combined
  • 17. Top with parmesan cheese
  • 18. Serve
