The combination of shrimp with pasta is my favorite dinner combination in the world. It makes sense since it brings together my two favorite foods, ha! Coming up with different flavors and ways of preparing it is a lot of fun and always makes me think of my Nana Lulu. I can never think of pasta without thinking of her!

Step preview

  1. Get a clean large saucepan
  2. Add pasta
  3. Add water
  4. Add salt
  5. Heat on high heat until boiling
  6. Cook for approx 7min and continue
  7. Get a clean blender jug
  8. Add mashed avocado
  9. Add arugula
  10. Add olive oil
  11. Add pine nuts
  12. Add grated parmesan cheese
  13. Add almond milk
  14. Add sea salt
  15. Blend until creamy then set aside
  16. Get a clean frying pan
  17. Add olive oil
  18. Heat on high heat
  19. Add peeled shrimps
  20. Cook for approx 3min
  21. Add lime juice
  22. Add lime zest
  23. Add sea salt
  24. Add chili powder
  25. Add smoked paprika
  26. Add red pepper flakes
  27. Cook for approx 1min on low heat
  28. Add cherry tomatoes
  29. Spoon purée into fish while stirring occasionally
  30. Drain pasta
  31. Transfer pasta to fish
  32. Toss gently until combined
  33. Top with grated parmesan cheese
  34. Serve
