Method
1. Line 2 clean baking sheets with parchment paper
2. Add all purpose flour, ground ginger, ground cinnamon and ground cloves to a clean medium bowl
3. Add cocoa powder, baking soda and nutmeg to the dry ingredients
4. Whisk briefly until combined then set aside
5. Add unsalted butter, ginger and dark brown sugar to a clean large mixing bowl
6. Cream together
7. Add molasses to the sugar mixture
8. Mix until combined
9. Add all the dry ingredients to the large mixing bowl and mix well
10. Add chocolate chips
11. Combine the chocolate chips into the dough
12. Chill in fridge - 1 hr
13. Pre-heat oven - 160°C
14. Scoop cookie mixture onto 2 baking sheets
15. Sprinkle with granulated sugar
16. Bake - 10 min, 160°C
17. Transfer onto cooling rack
