The filling in these rolls is enhanced by fragrant cloves and honey, which marry beautifully to the brown sugar and cinnamon and result in a sticky glaze on the bottom. The cream cheese frosting soaks into the nooks and crannies of each spiral, adding tang and moisture. These take about four hours from start to finish. I would recommend waking up early and making them for a big Sunday brunch. The recipe can easily be halved for a smaller crowd, but keep the proofing times the same.

Step preview

  1. Get a clean stand mixer bowl
  2. Add granulated sugar
  3. Add room temperature egg
  4. Add quick-rise yeast
  5. Add all purpose flour
  6. Get a clean glass measuring cup
  7. Add milk
  8. Add salted butter
  9. Melt in microwave
  10. Transfer mixture to dough
  11. Beat for 3min on low speed
  12. Add all purpose flour
  13. Mix until combined
  14. Turn out dough onto lightly floured surface
  15. Knead for 8min
  16. Form into a ball
  17. Grease a large mixing bowl
  18. Transfer dough to large mixing bowl
  19. Cover with plastic wrap
  20. Let rise for 2h until doubled
  21. Get a clean small bowl
  22. Add light brown sugar
  23. Add ground cinnamon
  24. Add ground cloves
  25. Mix together then set aside
  26. Punch down dough
  27. Roll out into a rectangle on lightly-floured surface
  28. Spread with room temperature salted butter
  29. Transfer mixture to dough
  30. Drizzle with honey
  31. Roll into a log
  32. Slice dough into rounds
  33. Add baking spray to a square pan
  34. Transfer rolls to 2 square pans
  35. Cover with kitchen towel
  36. Let rise for 45min
  37. Get a clean stand mixer bowl
  38. Add room temperature salted butter
  39. Add room temperature cream cheese
  40. Add powdered sugar
  41. Add vanilla extract
  42. Beat until smooth then set aside
  43. Pre-heat
  44. Bake for 15min until golden brown
  45. Let cool for approx 10min
  46. Transfer frosting to 2 square pans
  47. Serve immediately
