Method
1. Pre-heat oven - 175°C / 350°F
2. Line a clean muffin pan with paper muffin cups
3. Add all purpose flour, baking powder and salt to a clean medium bowl
4. Whisk briefly until blended
5. Add unsalted butter, light brown sugar and vanilla extract to a clean large mixing bowl
6. Cream together
7. Add egg to the batter and mix until well combined
8. Transfer dry ingredients to batter and mix until just combined
9. Add flaked coconut, chocolate chips, walnuts and dried cranberries and mix batter until combined
10. Spoon batter into muffin pan
11. Bake until golden brown - 25 min, 175°C / 350°F
12. Let cool
