Because breakfast can be dinner too! This delish dinner (masquerading as breakfast food) can do all day duty if you are so inclined. SIMPLE!

  • Swiss cheese icon

    50 g (about 3 tablespoons)cubed

  • Chorizo icon
    Chorizo

    100 g (about ½ cup)chopped

  • Onion icon

    100 g (about ¾)peeled, chopped

  • Brown mushrooms icon
    Brown mushrooms

    200 g (about 18 ¼)sliced

  • Egg icon

    4 (about 200 g)cooked

  • Pancake mix icon

  • Parmesan cheese icon

    50 g (about ¼ cup)

  • Garlic clove icon

    2 (about 12 g)

  • Umami paste icon

    2 tablespoons (about 36 g)

    METHOD


  • 1. Pre-heat a clean frying pan - medium-high heat
  • 2. Add pancake mix to the frying pan
  • 3. Make pancakes and set aside
  • 4. Add parmesan cheese, swiss cheese, garlic clove and fresh parsley to the TM5 bowl
  • 5. Blend - approx 5 sec, speed 5
  • 6. Transfer cheese mixture to small bowl then set aside
  • 7. Add chorizo and onion to the TM5 bowl
  • 8. Blend - approx 5 sec, speed 7
  • 9. Scrape down sides of TM5 bowl
  • 10. Add brown mushrooms and umami paste to the TM5 bowl
  • 11. Sauté - approx 10 min, Varoma, gentle stir
  • 12. Add egg to the clean serving plates
  • 13. Place a pancake on serving plate, sprinkle with cheese mixture, then top with chorizo mixture
  • 14. Wrap each edge of the pancake into the centre and eat hot
