Method
1. Toast sesame seeds in a clean large saucepan then set aside - approx 2 min, medium heat
2. Add olive oil and onion to the clean large saucepan
3. Cook until softened and continue - approx 2 min
4. Add garlic clove, yellow bell pepper, jalapeño pepper, cilantro, green onion and tomatillo to a clean large mixing bowl
5. Mix briefly until combined and add all the chopped vegetables in with the onions
6. Mix and cook until softened - 4 min
7. Add chicken stock and simmer while stirring occasionally - 5 min
8. Transfer all fried vegetables carefully to the blender jug
9. Blend until smooth then set aside
10. Add olive oil in the large saucepan over medium heat
11. Add chicken thigh to a clean medium bowl and season generously with salt & pepper
12. Transfer chicken to large saucepan
13. Sear each side - approx 3 min
14. Pour over blended vegetable sauce and cover
15. Cook the chicken in the sauce for another 15 minutes on low heat
16. Sprinkle with lime and garnish with green onion
17. Serve
