  • Salmon filet icon

    681 g (about 5)coarsely chopped

  • Dijon mustard icon
    Dijon mustard

    2 teaspoons (about 10 ml)

  • Shallot icon
    Shallot

    2 (about 84 g)chopped

  • Breadcrumbs icon
    Breadcrumbs

    ½ cup (about 23 g)

  • Capers icon

    1 tablespoon (about 9 g)coarsely chopped

  • Fresh chives icon

    5 g (about 1 ⅔)

  • Salt & pepper icon

    METHOD


  • 1. Add salmon filet to a clean medium bowl
  • 2. Transfer one quarter of fish to food processor bowl
  • 3. Add dijon mustard to the food processor bowl
  • 4. Blend until fine
  • 5. Add shallot to the food processor bowl
  • 6. Transfer the rest of fish to food processor bowl
  • 7. Blend briefly
  • 8. Place a clean medium bowl on Drop Scale
  • 9. Transfer content of medium bowl to medium bowl
  • 10. Add breadcrumbs, capers and fresh chives to the medium bowl
  • 11. Season with salt & pepper
  • 12. Mix gently until combined
  • 13. Form into rounds
  • 14. Grill
